One Pan Chicken and Veggie Bowl
This is a great recipe for those nights when you are tired or short on time but still want a healthy, nutritious and delicious meal.
Serves 4
Ingredients
2 large chicken breasts
1 spanish onion chipped
½ cup chopped red capsicum
½ cup chopped green capsicum
½ cup chopped yellow capsicum
1 cup chopped broccoli
1 cup cherry tomatoes halved
3 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
2 teaspoons Italian seasoning
¼ teaspoon paprika
½ fresh lemon (optional)
Method
- Preheat oven to 250 degrees
- Cut chicken into cubes
- Place the chicken and veggies in a medium roasting pan
- Add the olive oil, salt, pepper, Italian seasoning and paprika and toss to combine
- Bake for 20 minutes or until veggies are charred and chicken is cooked through
- Serve with some quinoa, brown rice, over some zucchini or sweet potato noodles or enjoy as is with a bit of fresh lemon juice squeezed over the top.
