Lemon Bliss Balls
We love bliss balls as an afternoon snack and these ones are a great treat in summer.
Ingredients
- Zest of 1 lemon
- Juice of 2 lemons
- 3 tablespoons pure maple syrup
- 75g almond meal (1 cup)
- 75g coconut oil (melted)
- 100g desiccated coconut
- 6 medjool dates (pitted)
- Extra coconut for rolling
Method
- Place zest and coconut oil in a food processor and mix until very fine, scrape down the sides and repeat until zest is completely blended into the coconut
- Add the rest of the ingredients and blend, scraping down sides and repeating until it’s all mixed together
- The mixture is quite soft at this stage but will firm up as the coconut oil sets
- If time permits let the mixture firm up at this point
- When the mixture is firmer roll into small balls and cover in the extra coconut
- Store in an airtight container in the fridge
