Mum’s Waldorf Salad

My parents led by example with a love of whole food shown throughout my childhood.  This recipe was a weekend special for us as it helped clean out the fridge and was super easy but once ‘thrown-together’ there were never any leftovers!  My definition of fresh comfort food.

Ingredients:

3 whole stalks of celery

2 medium apples

1 small red onion

1 medium avocado

2 cups roasted/grilled chicken

3/4 cup dried cranberries

1/2 cup whole egg mayonnaise

1/2 lemon juice

Method:

  1. Finely dice red onion and leafy head of celery stalks and combine in a large bowl.
  2. Dice remaining celery, apples, and chicken, into approx 1cm cubes and add to main bowl.
  3. Scoop out avocado into a seperate bowl and mash.  Combine avocado and mayonnaise and add lemon juice until smooth and creamy.  Combine into main bowl and stir through well with other chopped ingredients.
  4. Chop cranberries and walnuts to desired consistency (if you prefer it crunchy, leave these larger.) Add into main bowl and toss through lightly.

Present on plates or bowls with a sprig of celery leaf and slice of lemon.
