Best Ever Acai Bowl for Kids

Has there ever been a breakfast food more unbelievably fun and creative than the acai bowl? This recipe takes around seven minutes to make, is packed with antioxidants and healthy fats, and best of all, you know your kids will eat it because you just put the prettiest bowl of ice cream out for breakfast!

Serves: 2-4 depending on bowl size. Double the recipe for a family.

Prep: 7 minutes

Ingredients:

1 packet of frozen pureed acai (sold at supermarkets and health food stores)

1 frozen banana

1 Tbsp cacao (or to taste)

Splash of non-dairy milk (almond, non-GMO soy, coconut etc)

Optional extras:

½ avocado for extra fats

Tiny drop of edible peppermint oil for freshness

Method:

Add all the ingredients to a high powered blender and blend until smooth. Break acai into chunks before adding, so the block doesn’t become stuck in the blades. You may need to add some more liquid to get it moving, or use a damper. Try not to turn it into a smoothie though! It should be thick.

To serve:

This is the super fun part! Prep up some toppings and decorate your acai bowl once it’s finished blending and is in bowls. Topping ideas include:

  • Cacao nibs (available from health food stores – one pack will last a long time)
  • Shredded coconut
  • Coconut or good quality dairy yoghurt
  • Crushed peanuts or pistachios, or natural peanut butter
  • Fruits like kiwi, banana, all kinds of berries, mandarin/orange (a personal favourite of mine), mango, passionfruit
  • Muesli
  • Chia seeds
