Raw Fruit Cake

This raw dairy-free fruitcake is a winner on so many levels and contrary to what many people think, raw vegan dishes can be both healthy AND tasty. This is a beautifully moist cake that is perfect for dessert, and serving it with whipped coconut cream is a great option.   This is delicious when eaten raw, but this recipe works just as well if you cook it.

Ingredients

  • 1 cup dates
  • 1 cup LSA (ground linseeds, sunflower seeds and almonds)
  • 1 cup mixed dried fruit
  • 1 cup chopped nuts
  • 1/4 cup orange juice
  • 1/2 cup honey (maple syrup for vegans).

Method

1. Soak dates and sultanas in warm water overnight.

2. Drain & combine all ingredients, mixing well.

3. Pour into a greased loaf pan, lined with wax paper.

4. Press down with a weight and leave in fridge for 24 hours.                                                                                                                                                                                                                    Cooking option: 40 mins at 180.
