Green Bean and Feta Salad

This green bean and feta salad is a hit at parties! Fresh, vibrant and packed full of flavour, you will find yourself making this time and time again as it is sooooo delicious!

 

Ingredients:

  • 500g green beans
  • ¼ cup water
  • ½ tsp rock salt
  • 2 tbsp extra virgin olive oil
  • Juice from ½ lemon
  • 2 tsp dijon mustard
  • 2 cloves garlic minced in a garlic press
  • ¼ cup Danish feta cheese
  • Cracked pepper to taste

Method:

  1. In a little bit of extra virgin olive oil, cook the almonds in a frying pan on a medium-low heat and stir frequently so the almonds do not burn. You want them to be toasted and golden on the edges. Transfer the almonds to a bowl and cool in the fridge.
  2. Add green beans, water and rock salt in a frying pan on the stove and cover with a lid. Cook the beans on a medium heat until they are nearly tender (approximately 7-10 minutes).  Remove the lid, raise the heat to medium-high and cook until the liquid evaporates. Remove the frying pan from the heat.
  3. In a bowl whisk together the olive oil, lemon juice, mustard, minced garlic, cracked pepper.
  4. Add the olive oil mixture and cooled almonds to the fry pan with the green beans and crumble the feta into the pan and mix altogether.
  5. Transfer the green bean salad into a serving bowl or platter and enjoy!
