Quick Thai Pickle
This is a simple and delicious accompaniment to any Thai dish, and adds a little zing and sweetness to cut through the rich coconut cream used in many curries.
Ingredients:
- 1 cup rice vinegar
- 3/4 cup organic caster sugar
- 1 teaspoon salt
- Three organic lebanese cucumbers
- Two small red chillies, seeds removed and sliced thinly (omit if you don’t like it spicy)
- 1 shallot finely sliced
Method:
- Slice the cucumbers lengthwise twice so you end up with four long batons from each cucumber. Then slice each baton so you end up with very thin little triangle shaped pieces.
- Add the cucumber to a bowl or large jar.
- Add the rice vinegar and sugar to a small pot and simmer on low heat until it has reduced by one third, stirring occasionally. Add the salt, stir, then cool to room temperature.
- Add the vinegar/sugar liquid to the cucumbers along with the chili and shallots and stir.
- Cover and refrigerate for at least 30 minutes or up to 3 days.
- Enjoy with your favourite Thai curry or drizzled on a Vietnamese-style baguette.
