Healthy LCM Treats

These puffed rice bars are easy to make and taste delicious. My kids actually prefer these to the store bought ones and they are so much better for them!

Ingredients

150g date paste

100g organic butter

4 cups rice bubbles/krispies/puffed rice cereal

2 tablespoons chia seeds

2 tablespoons shredded coconut

Method

  1. Place date paste and butter in saucepan and melt to a paste like consistency
  2. Put rice bubbles, chia seeds and coconut in a large bowl
  3. Add the butter and date paste mixture to the rice bubbles and fold through
  4. Press firmly into a square tin or favourite mold and refrigerate for an hour before slicing or removing from mold.  
  5. Store in an airtight container in the fridge
  • My kids love some melted chocolate drizzled over the top of the bars as a little extra treat. Try and use a dark chocolate that’s at least 70%.
